Yep, the Electric Burrito. Corning, Iowa needs a Mexican restaurant and J. and Michelle have spent too many years not opening one. So with Edward Abbey’s quote: “Sentiment without action is the ruin of soul,” in mind, we’re finally getting this plan in the works.

In the last week, I’ve been in contact with three smart uncles (Jake, Stub and Alan), a lawyer, the Small Business Development Center, a realtor, the city, an insurance agent, a food supplier, kitchen suppliers, the utilities folks, my plumber hero, the Chamber of Commerce, and Adams Community Economic Development Corporation–not to mention several people I’ve forgotten, as well as website research and goodness knows what else. And, I’ve told my mom what I’m up to.

The blog portion of this adventure comes at Beth Waddle’s request, to keep a record of what it’s like to start a business in this lovely little town. I’ll try to keep up, but I ain’t making any promises. That last paragraph had a lot of information and zero details. I’ll try to get better in the days and weeks to come. Down the road, this blog will serve to keep our customers and travelers in the know as far as the Electric Burrito is concerned.
